Kale salad with citrus fruits



Light, healthy and colorful, this mixed salad delights us as the warm weather approaches.

Ingredients (for 4 people)

- 30g slivered almonds

- Marinade: 1 untreated or organic orange, 4 cuill. coffee, 4 cuill. tablespoon of olive oil, salt, pepper

- 2 oranges

- 2 small grapefruits

- 8 kale leaves

- 30 g mixed seeds (sunflower, squash...)
 
Preparation (15 min)

1. Toast the almonds in a frying pan.

2. Marinade: Finely grate the zest of the orange and squeeze its juice. Mix all the ingredients, salt and pepper.

3. Peel the oranges and grapefruits, then remove the supremes by collecting the juice that runs from it to add to the marinade.

4. Wash the kale leaves and remove the central pod. Chop them coarsely, mix them with the marinade and add the supremes. Leave to rest for an hour in the fridge.

5. Rectify the seasoning if necessary, add the seeds and almonds just before serving.

Tip: delicious also with crushed hazelnuts.
