Bread with herbs and honey

A simple and tasty recipe that pays homage to Greek gastronomy.


  •     4 medium-cooked eggs raised outdoors
  •     90 ml milk
  •     1 handful of finely chopped flat parsley and dill
  •     4 new onions, finely chopped
  •     4 medium slices of Greek sesame bread or crispy white bread
  •     1 spoon. olive oil soup
  •     salt and black pepper from ground cinnamon mill, to sprinkle
  •     Greek thyme honey, to water
  •     Greek yoghurt or katiki, to serve

This toast is beautifully embellished with green herbs and new onions that give it a pleasant aromatic flavour. Honey, on the other hand, adds a sweet note that is more subtle than that traditionally provided by maple syrup.

  1. Beat eggs and milk in a shallow bowl. Stir in new herbs and onions. Season with salt and pepper lightly.
  2.     Dip one or two slices of bread , depending on the size of the pan - in the egg mixture and let them soak for 2 to 3 minutes, turning. Do not leave them any longer, otherwise the crumb will be soggy and will fall into mush.
  3.     Meanwhile, heat the olive oil in a large skillet over medium-low heat. When hot, place one or two slices of egg-soaked bread on it and cook for 2 to 3 minutes until crisp and golden on the underside.  Keep warm while the remaining bread is baking.
  4.     Sprinkle the cinnamon bread and drizzle with honey. Serve with 1 generous tablespoon of yoghurt or katiki

Variation: Add basil, thyme or chopped mint. If you don't have katiki - fresh goat cheese - replace it with another fresh cheese, preferably goat or sheep. Serve with roasted bunch tomatoes.
