Vegan Brownies



Don't eat eggs or butter or cream? This 100% chocolate vegan recipe is made for you.

Ingredients (for 9 to 12 parts)

  •     200g vegan pastry chocolate
  •     50g vegan margarine
  •     75g whole sugar
  •     4 tsp applesauce with no added sugar
  •     1/4 tsp vanilla powder
  •     1/4 tsp baking soda
  •     1/2 tsp salt
  •     80g T65 wheat flour
  •     20g hazelnut powder
  •     2 tsp unsweetened cocoa powder
  •     40g crushed walnuts
  •     20g dark chocolate chips
  •     1/2 tsp salt flakes or fleur de sel

Preparation

  • Melt the chocolate into pieces with the margarine, also in pieces, in a double boiler in a bowl or a large cul-de-sac. When the chocolate begins to melt, cut under the heat and mix with a spatula.
  •     Remove the bowl from the double boiler and wipe underneath. Add sugar and whisk. Add the compote and vanilla and whisk together.
  •     Combine bicarbonate, salt, flour, hazelnut powder and cocoa powder and sift. Gradually add to the bowl, mixing with a soft spatula. Add the crushed walnuts and mix.
  •     Pour into a square dish of about 20 x 20 cm, cheesy with baking paper.
  •     Spread the chocolate chips on top and sprinkle with 1/2 tsp flaked salt or fleur de sel.
  •     Allow to cool before unmoulding.

Tip: Cooking time is important, the edges should not burn or harden. The crust should be well dry and brownie, fluffy, but cooked and not too soft. Adjust the cooking time or temperature if your oven heats up too much or not enough the first time you make this recipe. You will determine what is your ideal cooking time/temperature depending on your oven.
