Cooking bacon-wrapped scallops in the oven

Servings for 24 person

  •     3/4 cup maple syrup
  •     1/4 cup low-salt soy sauce
  •     1 tbsp Dijon mustard
  •     12 slices smoked bacon, halved
  •     24 toothpicks
  •     2 tbsp brown currants

Preparation steps

  1. In a bowl, combine maple syrup, soy sauce and Dijon mustard. Add scallops and stir to cover with marinade. Cover with plastic wrap and marinate in the refrigerator for at least an hour.
  2.     Preheat the oven to 375 degrees F (190 degrees Celsius).
  3.     Spread the bacon pieces on the sheet metal in a single layer. Bake until bacon has lost some fat but is still tender enough to handle, about 8 minutes. Drain on paper towels and wipe off grease on cookie sheet.
  4.     Wrap each scallop with a piece of bacon and hold with a toothpick. Place on the sheet and sprinkle with brown icing.
  5.     Bake until scallops are opaque and bacon is crisp, about 10-15 minutes, turning halfway through cooking.
